Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the bulk of the fritter and gives its soft, moist interior.
Egg
Binds the batter so it coats the cakes and holds together while frying.
Flour
Thickens the batter so it clings to the cakes and helps them brown.
Butter
Adds richness and flavor, and helps the outside brown in the frying fat.

The step that matters

Frying in hot fat. If the fat is not hot enough, the batter absorbs oil and turns greasy instead of crisping. Hot fat sets the coating quickly and drives browning on the surface.
