What each ingredient does

Peaches
Provide the fruit that softens during boiling and forms the canned texture and flavor.
Sugar
Sweetens the syrup and helps preserve the fruit's flavor and colour in the jar.

The step that matters

Boil the peaches until a broom straw pierces them easily. Boiling softens the fruit enough to pack well and lets the syrup penetrate. Undercooked peaches stay firm and may not be properly heated through before sealing, while overcooking makes them mushy.
