Tapioca Meringue

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the custard base

  1. Scald the milk.

  2. Let the milk cool.

  3. Soak the tapioca in the milk overnight in the refrigerator.

  4. Mix the egg yolks with 1 tablespoon sugar, salt, and lemon rind.

  5. Combine the yolk mixture with the soaked tapioca.

Bake and top with meringue

  1. Bake the mixture in a deep dish at 350°F (175°C) for 30 minutes.

  2. Whisk the egg whites until frothy.

  3. Add lemon juice and ⅔ cup sugar to the whites.

  4. Spread the meringue over the pudding.

  5. Brown the meringue for a few minutes in the oven.

Serve

  1. Serve cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flake tapioca
Swells in the milk and thickens the pudding as it soaks and bakes.
Egg yolks
Enrich the custard and help it set into a soft, creamy texture.
Egg whites
Whipped into foam to form the light, airy meringue topping.
Milk
Forms the liquid base that the tapioca softens in and sets into a custard.
Sugar
Sweetens the pudding and stabilises the whipped egg white meringue.

The step that matters

Whisk the egg whites until frothy before adding the sugar. Egg whites form a stable foam only when whipped properly, and adding sugar gradually helps them hold their volume. Under-whipped or deflated whites will not support the topping or brown well.
