What each ingredient does

Hubbard squash
Forms the main body of the dish, becoming soft and smooth when steamed and mashed.
Butter
Adds richness and a smooth, silky mouthfeel to the mashed squash.

The step that matters

Steam until very tender. Squash that is not fully tender will mash unevenly and stay fibrous or lumpy. Thorough steaming softens the starch and cell walls so the flesh breaks down into a smooth purée.
