Why it works: Potato and pepper are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 8,305 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash and peel the potatoes, then split them in half.

  2. Dust the potatoes with coarse sea salt and lightly dredge with flour.

  3. Place them on a baking sheet and cover closely.

Roast and finish

  1. Bake in a hot oven at 400°F (200°C) until soft.

  2. Turn the potatoes, add a small lump of butter on each piece, and dust with pepper.

  3. Bake uncovered for a little longer until they are crisp and brown.

  4. Ensure they are mealy inside.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy body that softens into a mealy interior when baked.
Flour
Forms a light coating that helps the surface brown and crisp in the oven.
Butter
Adds fat and richness, helping the surface brown and flavouring the potatoes.

The step that matters

Covering, then uncovering, the potatoes. Baking covered first steams the potatoes until soft. Removing the cover lets surface moisture evaporate so the dredged coating can crisp and brown. Leaving it covered too long makes the skins soft rather than crisp.

Swap the potato

How well each one fits the dish's main ingredients (flour, butter, pepper):

  1. Shallotfits better
  2. Chivefits about as well
  3. Capsicumfits about as well
  4. Potatothe original

Fit is the average pairing score against flour, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
