Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard as they set with heat, giving a rich, creamy filling.
Flour
Thickens the cream mixture so it holds its shape when boiled.
Macaroons
Add almond flavor and body to the filling as they soften into it.
Sugar
Sweetens the filling and balances the brandy or sherry and citrus.
Cream
Adds moisture and richness, giving the filling a smooth, soft texture.

The step that matters

Stir the filling in the boiling water bath until very thick. Egg yolks thicken and can curdle or scramble if overheated, so the filling must be stirred gently and constantly while it thickens over gentle, indirect heat.

Swap the ginger

How well each one fits the dish's main ingredients (cream, flour, orange, brandy, egg, sugar, lemon):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Gingerthe original
  4. Tarragonfits about as well

Fit is the average pairing score against cream, flour, orange, brandy, egg, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
