What each ingredient does

Yeast cake
Ferments the batter, producing gas that makes it rise and become airy.
Flour
Forms the structure of the batter and dough once it is set on the griddle.
Warm water
Hydrates the flour and activates the yeast.

The step that matters

Set the batter aside to rise until it looks like a honeycomb.. The rise develops the open, bubbly texture that gives the muffin its crumb. Underproofed batter yields a dense result, while the bubbles create the holes that catch butter later.
