    Shared aroma: isobutyraldehyde (malty, green).

Butter and flour barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Main protein; cooking them slowly keeps the pieces tender and moist.
Butter
Fat that cooks the sweetbreads and carries flavor into the sauce.
Flour
Thickens the butter and broth into a smooth, thick sauce.
Broth or water
Liquid that hydrates the flour and forms the body of the sauce.

The step that matters

Stirring the flour-butter mixture with the liquid. Adding liquid to flour without constant stirring can form lumps. Stirring carefully as the liquid goes in lets the starch disperse and thicken evenly into a smooth sauce.
