Oyster Fritters — American Receipt

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Whip the cream to a froth and strain it.

  2. Whisk the yolks and whites of the eggs separately.

  3. Stir the eggs into the flour and sifted sugar.

  4. Gradually mix with the frothed cream.

  5. Pour the mixture into shallow tins.

  6. Bake in a moderate oven at 350°F (175°C) for about 20 minutes.

  7. Once done, layer one cake on top of the other with jam in between.
