Why it works: Milk and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓
Dressing for Turbot
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Boil the milk in a saucepan.
Thicken the milk with flour until it reaches the consistency of cream, seasoning with salt and pepper.
Remove from heat and stir in the butter until melted.
Beat the eggs lightly and add them to the dressing once it has cooled.
In a pudding dish, place a layer of fish and cover it with the dressing.
Sprinkle a layer of finely rolled cracker crumbs on top.
Repeat the layers until all the fish is used, finishing with a layer of cracker crumbs on top.
Bake in a preheated oven at 350°F (175°C) for 30 minutes.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
