What each ingredient does

Butter
Creams with the sugar to trap air, giving a light, tender crumb and rich flavour.
Eggs
Add structure and richness, binding the batter as they set in the oven.
Sour cream
Adds moisture and mild acidity, keeping the cake tender and moist.
All-purpose flour
Provides the main structure that sets as the cake bakes.
Sugar
Sweetens the cake and, creamed with butter, helps create a light texture.

The step that matters

Gradually add the flour until just combined.. Overmixing once flour is added develops gluten, which can make the cake tough and dense. Mix only until no dry streaks remain.

Swap the raisin
