Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Pare and chop the apples finely.

  2. In a well-greased pan, layer the apples to a thickness of 1 inch.

  3. Sprinkle sugar and spice over the apples.

  4. Add a layer of fine bread crumbs, then repeat the layers of apples, sugar, and spice.

  5. Top with a piece of butter the size of an egg and pour ½ cup of water over the entire dish.

Bake and make the sauce

  1. Bake at 350°F (175°C) for two hours.

  2. For the sauce, combine twice as much sugar as butter in a bowl.

  3. Beat 1 egg very lightly with your preferred spice.

  4. Add a small amount of boiling water and hold the sauce over boiling water, beating hard for a few minutes until hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk and tart fruit flavour that softens as the dish bakes.
Fine bread crumbs
Soak up juices and butter, giving the layers a soft, pudding-like body.
Butter
Adds richness and fat that carries flavour and helps the top brown.
Sugar
Sweetens the apples and draws out juices as they cook.
Egg
Thickens the sauce when beaten and heated, giving it a creamy texture.

The step that matters

Beating the sauce over boiling water. Heating the egg gently while beating keeps it from scrambling and lets it thicken smoothly. Adding too much heat or stopping the beating can leave lumps.

Swap the apple

How well each one fits the dish's main ingredients (sugar, bread, butter, egg, sauce):

  1. Vanillafits better
  2. Figfits about as well
  3. Raisinfits about as well
  4. Applethe original

Fit is the average pairing score against sugar, bread, butter, egg, sauce. Candidates are from the same food group and used in at least 100 recipes.
