Potato Soup
Ingredients
Directions
Make the soup
Boil the potatoes in 2 quarts of water until tender.
Mash the potatoes or crush them with a spoon, then season with salt and pepper.
Add 2 quarts of milk and a large lump of butter, and bring to a boil.
For a richer flavor, use less milk and add some cream.
Once boiling, stir in a few cracker crumbs.
Serve
Before serving, drop in some Boston crackers split in two.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Potatoes
- Break down into starch that thickens the soup and gives it body.
- Milk
- Provides the liquid base and creamy texture of the soup.
- Butter
- Adds fat for a smooth, rich mouthfeel and flavor.
- Cracker crumbs
- Absorb liquid and thicken the soup further as they soften.
The step that matters
Bringing the milk to a boil. Once milk is heated to a boil it can scorch on the bottom of the pot and curdle if left unattended. Stirring and keeping heat moderate helps keep the soup smooth.
Swap the potato
How well each one fits the dish's main ingredients (milk, butter, pepper):
- Potatothe original
- Capsicumfits about as well
- Tomatofits less well
- Asparagusfits less well
Fit is the average pairing score against milk, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
