The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly as it cools.
Oranges
Provide the main fruit flavor and pieces suspended in the jelly.
Sugar
Adds sweetness and balances the tartness of the citrus.
Lemons
Add acidity that brightens the orange flavor.

The step that matters

Soaking the gelatine. Gelatine must hydrate fully in cold water before it meets hot liquid; otherwise it clumps and sets unevenly, leaving a weak or grainy jelly.

Swap the lemon

How well each one fits the dish's main ingredients (orange, sugar, cinnamon):

  1. Vanillafits better
  2. Lemonthe original
  3. Figfits about as well
  4. Raisinfits about as well

Fit is the average pairing score against orange, sugar, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
