Boiled Potatoes
Ingredients
Directions
Wash the potatoes well and peel off a thin layer.
Place them in cold water to prevent discoloration.
Cut larger potatoes into pieces the size of smaller ones for even cooking.
If old, start cooking in cold water; if fresh, place in boiling salted water.
Boil slowly for about 30 minutes or until easily pierced with a fork.
Drain all water and shake the pot to expose the potatoes to air.
Sprinkle with a little salt and cover with a double cloth.
Let sit on the back of the range for a few minutes to evaporate moisture.
