Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. Cream the butter and sugar together.

  3. Beat in the eggs one at a time, mixing well after each addition.

  4. Roll the dough thin and cut into desired shapes.

Decorate and bake

  1. Paint the tops with egg white.

  2. Sprinkle equal parts ground cinnamon and granulated sugar on top.

  3. Place one fourth of a blanched almond in the center of each tart.

  4. Place in floured pans and bake until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to add tenderness and richness to the tart dough.
Sugar
Creamed with butter for sweetness and a fine, tender crumb.
Eggs
Beaten in to bind the dough and add structure and richness.
Egg white
Painted on top to help the cinnamon sugar adhere and encourage browning.

The step that matters

Paint the tops with egg white. Egg white gives the cinnamon sugar something to stick to and helps the surface brown evenly. Too thick a coat can make the tops look wet or pool at the edges.
