What each ingredient does
- Almonds
- Provide the nutty flavor and crisp texture that the frying and browning develop.
- Coarse sea salt
- Adds salty flavor and a crunchy contrast to the fried almonds.
The step that matters
Fry until nicely browned. Frying at the right temperature browns the almonds through Maillard reactions, which build their flavor. Too little browning leaves them pale and bland, while too much makes them bitter, so they should be pulled out as soon as they reach a good golden brown.
