Saddle of Mutton
Ingredients
Directions
Carve the saddle by cutting long slices from the back, starting near the tail and slicing parallel to the spine.
Ensure the latter part of the slice contains plenty of fat.
Serve with a little fresh gravy poured over the joint after carving.
Recipe from a historical cookbook (Internet Archive).
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
