Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lobsters
Provide the sweet meat that forms the main body of the filling.
Eggs
Bind the filling and set when heated, holding it together in the shell.
Butter
Adds richness and moisture to the filling.
Stale bread
Absorbs moisture and adds body, giving the filling structure as crumbs.

The step that matters

Pack the mixture solidly into the shells. Loose packing leaves air gaps that can make the filling sag or set unevenly. Firm packing removes air pockets so the egg proteins set into a stable, sliceable mass when baked.

Swap the parsley

How well each one fits the dish's main ingredients (lobster, butter, egg, bread, pepper):

  1. Parsleythe original
  2. Nutmegfits about as well
  3. Tarragonfits less well
  4. Capersfits less well

Fit is the average pairing score against lobster, butter, egg, bread, pepper. Candidates are from the same food group and used in at least 100 recipes.
