Cream Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat your oven to 350°F (175°C).

Make the custard

  1. In a bowl, beat the eggs and mix in the sugar until well combined.

  2. Add the cream and grated nutmeg, stirring until smooth.

  3. Tear the dry bread into small pieces and add to the mixture.

  4. Fold in currants, raisins, and citron to taste.

Bake

  1. Pour the mixture into a greased baking dish and bake for about 30-40 minutes, or until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard and bind the pudding into a firm, sliceable structure as they cook.
Cream
Adds richness and moisture, giving the pudding a soft, tender texture.
Dry bread
Soaks up the custard and forms the body of the pudding as it bakes.
Sugar
Sweetens the custard and helps it brown lightly at the surface.

The step that matters

Bake until set. Baking until the egg proteins just set gives a firm pudding; underbaking leaves it loose and wet, while overbaking can make the eggs curdle and turn grainy.

Swap the currant

How well each one fits the dish's main ingredients (egg, sugar, cream, nutmeg, bread, raisin):

  1. Vanillafits better
  2. Figfits better
  3. Lemonfits better
  4. Currantthe original

Fit is the average pairing score against egg, sugar, cream, nutmeg, bread, raisin. Candidates are from the same food group and used in at least 100 recipes.
