Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Forms the gel structure that makes the jelly set firm when chilled.
Sugar
Adds sweetness and helps balance the sharpness of the citrus juices.
Orange and lemon juice
Adds acidity and citrus flavour that brightens the jelly.
Sherry wine
Adds aroma and a wine flavour to the jelly.

The step that matters

Soak the gelatine fully before adding boiling water. Gelatine must hydrate in cold water before heating so its proteins dissolve evenly. Adding it dry or skipping the soak can leave lumps and weaken the set.

Swap the lemon

How well each one fits the dish's main ingredients (orange, sherry, wine, sugar):

  1. Vanillafits better
  2. Pineapplefits about as well
  3. Applefits about as well
  4. Lemonthe original

Fit is the average pairing score against orange, sherry, wine, sugar. Candidates are from the same food group and used in at least 100 recipes.
