Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potato
Forms the soft, starchy base that holds the croquette together and gives it body.
Egg yolk
Binds the mixture and adds richness so the shape holds together.
Butter
Adds fat for a smoother texture and richer flavour in the filling.
Breadcrumbs
Form a crisp outer coating that browns during frying.

The step that matters

Frying until golden brown. Oil must be hot enough to brown the breadcrumb coating quickly; if it is too cool, the croquettes absorb oil and turn greasy before the outside crisps.

Swap the celery

How well each one fits the dish's main ingredients (potato, egg, butter, pepper):

  1. Parsleyfits better
  2. Dillfits better
  3. Nutmegfits better
  4. Celerythe original

Fit is the average pairing score against potato, egg, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
