Escalloped Cauliflower

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the cauliflower

  1. Soak the cauliflower in salted water for 30 minutes.

  2. Wash and cut the cauliflower into small pieces.

  3. Cook the cauliflower in a large pot of water with the cover off, salting it when it’s half done.

  4. Once tender, drain the water.

Assemble and bake

  1. Pour the medium white sauce over the cauliflower.

  2. In a buttered baking dish, layer the breadcrumbs and cauliflower alternately.

  3. Top with buttered breadcrumbs and bake in a 400°F (200°C) oven until browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the bulk of the dish and becomes tender when cooked, giving the casserole its body.
Medium white sauce
Adds moisture and a creamy texture that binds the cauliflower together.
Breadcrumbs
Form a crisp, browned topping and absorb some moisture during baking.
Butter
Adds richness and helps the breadcrumbs brown in the oven.

The step that matters

Drain the cauliflower well once tender. Excess cooking water left on the cauliflower dilutes the white sauce and can make the dish watery and loose rather than creamy.

Swap the cauliflower

How well each one fits the dish's main ingredients (sauce, butter):

  1. Shallotfits better
