Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the mixture as it cools, giving it a firm, sliceable body.
Strawberry pulp
Provides the main strawberry flavour, colour and fruity body.
Sugar
Adds sweetness and balances the tartness of the fruit.
Whipped cream
Adds air and richness, making the set cream light and smooth.
Lemon juice
Adds acidity that brightens the strawberry flavour.

The step that matters

Fold in the whipped cream once the mixture just begins to thicken. Gelatine sets as it cools, so folding too early lets the cream deflate, while folding too late leaves the mixture too firm to blend evenly and can leave lumps.
