Spiced Grapes

Ingredients

Directions

Prepare the grapes

  1. Wash the grapes and remove them from the stems.

  2. Separate the pulp from the skins, keeping the skins for later use.

  3. Boil the pulp until the seeds loosen.

  4. Pass the pulp through a sieve or fine colander to remove the seeds.

Make and jar the spiced grapes

  1. Mix the pulp, skins, and other ingredients, then cook until it reaches the consistency of jam.

  2. Pour into hot jelly glasses and cover with melted paraffin. Tilt the glasses in all directions to ensure the paraffin coats the sides and covers the mixture completely.

What each ingredient does

Grapes
Provide the main fruit pulp and skins, giving the jam its body and flavor.
Sugar
Adds sweetness and helps thicken the mixture to a jam consistency as it cooks.
Vinegar
Adds acidity that brightens the flavor and balances the sweetness.
Mixed ground spices
Provide aroma and warm flavor throughout the jam.

The step that matters

Cooking to the consistency of jam. Sugar and fruit pectin set as the mixture cooks down, so stopping too early leaves it runny and stopping too late can make it stiff or sticky. Judge by how it thickens rather than by time alone.

Swap the grape

How well each one fits the dish's main ingredients (sugar, vinegar):

  1. Vanillafits better
  2. Strawberryfits better
  3. Pineapplefits better
  4. Grapethe original

Fit is the average pairing score against sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
