Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated gelatin
Sets the fruit mixture into a soft, creamy structure as it cools.
Heavy cream
Whipped and folded in, it adds lightness and a rich, airy texture.
Banana puree
Provides body, moisture and mellow sweetness to the cream.
Powdered sugar
Sweetens the mixture and dissolves smoothly into the fruit purees.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness.

The step that matters

Stirring over crushed ice until it begins to thicken. Gelatin sets as it cools, so the mixture must thicken enough to hold air from the cream. If it is left to set fully before folding, the cream will not blend in smoothly and the texture turns lumpy or heavy.
