Baked Apples

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Wash the apples and core them from the stem, leaving the bottom intact to hold the sugar.

  2. Fill the cavities with sugar and sprinkle a little cinnamon on top.

  3. If the apples are hard, bake them for a short time before adding the sugar.

  4. Baste the apples to keep the skin tender.

  5. Bake in a moderate oven at 350°F (175°C) until soft.
