Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cranberries
Provide the tart fruit filling and, once stewed, the moist body of the pudding.
Potato and cream paste
Forms the base layer that holds the cranberry filling together.
Sugar
Sweetens the tart cranberries to taste.
Cold butter
Enriches the cold sauce with fat for richness and a smooth texture.

The step that matters

Tie it securely at both ends. If the cloth is not sealed tightly, water can seep into the pudding during boiling, making it soggy and diluting the filling. A firm seal keeps the pudding compact and moist.

Swap the potato

How well each one fits the dish's main ingredients (sugar, cream, flour, sauce):

  1. Arrowrootfits better
  2. Horseradishfits better
  3. Shallotfits better
  4. Potatothe original

Fit is the average pairing score against sugar, cream, flour, sauce. Candidates are from the same food group and used in at least 100 recipes.
