Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiff peaks, they trap air that lifts the cake and makes it light.
Egg yolks
Add richness and tenderness, and help bind the batter.
Flour
Provides the structure that sets as the cake bakes.
Sugar
Sweetens the cake and helps give it a tender crumb.
Rich cream
Adds fat and moisture, making the crumb soft and rich.

The step that matters

Folding in the egg whites. Whipped egg whites hold the air that lifts the cake. Stirring them in vigorously knocks out air and makes the cake dense, so fold gently and only until no white streaks remain.
