Ingredients

Directions

Prepare the syrup

  1. Prepare the syrup by mixing 1 quart of sugar with 2 quarts of water.

  2. Use a porcelain kettle dedicated to canning.

Prepare the peaches

  1. Boil about 3 quarts of water in a second porcelain kettle.

  2. Place peaches in a clean wire basket.

  3. Dip the peaches into boiling water for a moment.

  4. Transfer the peaches immediately into cold water to peel easily.

  5. Halve the peeled peaches.

  6. Drop the peach halves into boiling water to simmer until tender.

Can the peaches

  1. Lift each peach half out with a wire spoon and fill a prepared can.

  2. Pour in boiling syrup until the jar is full.

  3. Cover the jar and screw down tightly.

  4. Continue this process until all peaches are canned.

  5. If syrup remains, add the simmering water and more sugar.

  6. Boil until it thickens for jelly or marmalade.
