Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the crisp, firm body of the pickle that soaks up the spiced vinegar.
Cider vinegar
Provides the acidity that preserves the cauliflower and gives the pickle its sharp flavor.
White mustard seed
Adds a pungent, sharp flavor that carries into the pickling liquid.
Coarse sea salt
Seasons the blanching water, lightly flavoring and firming the cauliflower before pickling.

The step that matters

Scalding the vinegar after a week. Pouring the vinegar off and returning it hot reheats the liquid so it can be brought back to a safe, effective acidity around the vegetable. Keeping the vegetable fully submerged in the liquid helps prevent spoilage.

Swap the mace

How well each one fits the dish's main ingredients (cauliflower, clove, allspice, ginger, mustard, pepper, cider):

Fit is the average pairing score against cauliflower, clove, allspice, ginger, mustard, pepper, cider. Candidates are from the same food group and used in at least 100 recipes.
