What each ingredient does

Cucumbers
The main vegetable; the salt and vinegar soaks season it and change its texture.
Vinegar
Adds sharp acidity that gives the pickle its tang and helps preserve it.
Sugar
Adds sweetness that balances the sharpness of the vinegar.
Cinnamon
Adds warm, sweet spice aroma to the pickling liquid.
Cloves
Adds a strong, aromatic spice flavor to the pickling liquid.

The step that matters

Boil the mixture until tender. Boiling the sugar and vinegar mixture with the spices lets the flavors infuse and dissolve the sugar. Overcooking can soften the cucumbers too far, so check tenderness and stop once they reach the texture you want.

Swap the cucumber

How well each one fits the dish's main ingredients (vinegar, sugar, cinnamon, clove):

  1. Mustardfits better
  2. Capsicumfits about as well
  3. Sweet potatofits about as well
