Pumpkin Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the filling

  1. Combine the strained pumpkin, rich milk, salt, and ground ginger in a large pot.

  2. Cook over medium heat until heated through.

  3. Beat the eggs until well combined. Gradually add the sugar to the eggs and mix until dissolved.

  4. Combine the egg mixture with the pumpkin mixture, stirring well.

Bake

  1. Pour the filling into a prepared pie crust.

  2. Bake at 350°F (175°C) until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard as they cook, giving the filling structure and body.
Pumpkin
Provides the bulk, flavor, and moisture of the filling.
Rich milk
Adds moisture and richness, helping the filling become smooth and creamy.
Sugar
Adds sweetness and balances the spices.

The step that matters

Bake until set. Eggs thicken the filling as they heat. Pulling the pie too early leaves a runny centre, while overbaking can cause cracking and a grainy texture.

Swap the ginger

How well each one fits the dish's main ingredients (pumpkin, milk, egg, sugar):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Gingerthe original
  4. Allspicefits less well

Fit is the average pairing score against pumpkin, milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
