Why it works: Molasses and ginger are a kitchen classic. They rank in the top 14% of all ingredient pairs, and cooks put them together in 4,116 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Dissolve the baking soda in 1 tablespoon of boiling water and add it to the molasses.

  2. Stir in the melted lard, boiling water, ginger, and flour.

  3. Beat the mixture until smooth.

Bake

  1. Pour into a greased baking pan and bake in a moderate oven at 350°F (175°C) for about 30 minutes.

What each ingredient does

New orleans molasses
Provides sweetness, dark color, moisture, and rich flavor, and its acidity reacts with the baking soda.
Baking soda
Reacts with the molasses acid to release gas, which lifts and lightens the cake.
Flour
Builds the cake's structure as its proteins set during baking.
Lard
Adds fat that tenderizes the crumb and carries flavor.
Ginger
Adds the warm, spicy aroma that defines the cake's flavor.

The step that matters

Dissolving the baking soda before mixing it into the molasses. Baking soda must be fully dissolved and evenly distributed so it reacts with the molasses acid throughout the batter. Unevenly mixed soda leaves pockets that over-rise or taste bitter, and uneven lift gives a coarse, patchy crumb.

Swap the ginger

How well each one fits the dish's main ingredients (molasses, flour):

  1. Jalapenofits better
  2. Cinnamonfits better
  3. Allspicefits about as well
  4. Gingerthe original

Fit is the average pairing score against molasses, flour. Candidates are from the same food group and used in at least 100 recipes.
