Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White sugar
Provides the sweetness and forms the body of the taffy as it cooks.
Vinegar
Adds acidity that helps keep the sugar from crystallising into a grainy texture.
Butter
Adds fat that softens the texture and gives the taffy a smooth finish.

The step that matters

Cooking to the soft ball stage. Cooking the sugar syrup to the soft ball stage sets how firm the taffy will be once cool. Stopping too early leaves it sticky, while cooking too long makes it hard.
