Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff pastry
Bakes into a light, flaky, crisp shell that holds the filling.
Large fresh oysters
Provide the main seafood flavor and the tender, briny filling.
Butter
Adds richness and a smooth, rounded mouthfeel to the filling.
Hard-boiled egg
Grated into the filling to add body and a creamy texture.
Oyster liquor
Adds moisture and concentrated oyster flavor to the filling.

The step that matters

Cook the oysters briefly. Oysters toughen and shrink quickly when overcooked, so they should be heated only until they just firm and curl. Removing them from heat promptly keeps the filling tender and juicy.

Swap the mace

How well each one fits the dish's main ingredients (oyster, clove, nutmeg, egg, butter):

  1. Cinnamonfits better
  2. Allspicefits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against oyster, clove, nutmeg, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
