Ingredients

Directions

Make the curd

  1. Pour boiling water over the thick milk in a pan, stirring while you pour.

  2. Let the milk settle until it separates from the whey.

  3. Pour off most of the water and whey.

  4. If not fully cooked, add more hot water.

  5. Press the curd to the upper side of the pan to remove excess water.

  6. Optionally, let it stand in cold water for a few moments.

Finish

  1. Once dry, work the curd finely by rolling it between your hands.

  2. Add salt and cream to taste.

What each ingredient does

Thick milk
Provides the proteins that coagulate into the curd when heated and acidified.
Boiling water
Heats the milk so its proteins separate from the whey.
Cream
Adds fat and richness to the mild curd.

The step that matters

Press the curd to remove excess water. Curd holding too much water stays wet and loose, so it will not hold together or taste rich. Pressing out the whey gives a firmer, creamier texture.
