What each ingredient does

Gelatine
Sets the liquid cream into a firm, sliceable structure as it cools.
Cream
Adds richness and a soft, creamy texture that balances the set gelatine.
Sugar
Sweetens the coffee and softens the perceived bitterness of the coffee.
Coffee
Provides the main flavour and aroma of the dessert.

The step that matters

Dissolve the gelatine fully over boiling water. Gelatine must dissolve completely before the cream goes in. Undissolved granules leave gritty specks and weak setting, and it should be heated gently rather than boiled hard so it keeps its setting power.
