Ingredients

Directions

Prepare

  1. Drain the oysters, reserving their liquor in a pitcher.

  2. In a stewpan, melt the butter over medium heat.

  3. Add the oysters and simmer until just about to boil, then remove from heat.

  4. Transfer the oysters one at a time to a bowl of very cold water to plump them.

Make the stew

  1. In the same stewpan, combine the reserved oyster liquor with mace, nutmeg, peppercorns, and cayenne.

  2. Stir in the cream (or butter) and bring the mixture to a boil.

  3. Once boiling, add the oysters back into the stewpan.

  4. Simmer for five minutes, then remove from heat.

Serve

  1. Serve the oysters over buttered toast that has been dipped in hot water or milk.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavour and tender, briny body of the stew.
Butter
Adds richness and a silky mouthfeel to the stew base.
Oyster liquor
Supplies the concentrated sea-salt flavour that seasons the stew.
Cream
Thickens the liquid slightly and gives the stew a smooth, rich texture.

The step that matters

Heating the oysters until just about to boil. Oysters are delicate protein; overheating them toughens and shrinks them and makes them rubbery. Bringing them just to the edge of boiling cooks them gently, and the later simmer should not be allowed to rise to a hard boil.

Swap the mace

How well each one fits the dish's main ingredients (oyster, butter, nutmeg, pepper, cream):

  1. Cinnamonfits better
  2. Parsleyfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against oyster, butter, nutmeg, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
