Oyster Patties

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Roll out the puff pastry and cut it into small squares.

Assemble

  1. Place a layer of dried oysters on half of the pastry squares.

  2. Sprinkle salt, powdered mace, and cayenne pepper over the oysters.

  3. Cover with another piece of pastry square.

  4. Wet the edges of the pastry with cold water using a pastry brush, then pinch the edges together to seal.

Bake

  1. Bake in the preheated oven until light golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff pastry
Forms the flaky, layered shell that puffs and browns around the filling.
Oysters
Provide the savory, briny filling that is the main flavour of the patty.
Powdered mace
Adds a warm, aromatic spice note that complements the oysters.
Cayenne pepper
Adds a sharp heat that balances the richness of the pastry and oysters.

The step that matters

Sealing the edges. If the edges are not firmly sealed with water and pinched, steam and juices escape or leak during baking, leaving the filling dry or the patty burst open. Moist edges bond the two pastry layers.

Swap the mace

How well each one fits the dish's main ingredients (oyster, pepper):

  1. Parsleyfits better
  2. Celeryfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against oyster, pepper. Candidates are from the same food group and used in at least 100 recipes.
