Game Patties
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Make a flavored mince from the remains of game and moisten with a little gravy.
Roll out the light crust or puff pastry and cut into small round patties.
Brush the patties with the beaten egg.
Bake the patties in a preheated oven at 400°F (200°C) until lightly browned, about 20 minutes.
Warm the mince in a saucepan and place a little in the center of each patty.
Serve hot, piled on a napkin.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
