Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, beat the eggs and sugar together until light and fluffy.

  3. Gently fold in the flour and lemon raspings until just combined.

Bake and cool

  1. Grease moulds with butter and pour the batter in.

  2. Sift additional sugar over the top.

  3. Bake until golden brown, then carefully remove from the moulds.

  4. Place the biscuits glazed side down on a sieve to cool.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped with sugar to trap air, giving the biscuit its light, airy structure.
Sugar
Sweetens the biscuit and, beaten with the eggs, helps build the airy foam.
Flour
Provides the starch and gluten that set the sponge structure as it bakes.
Lemon raspings
Adds aromatic lemon flavour to the batter.

The step that matters

Folding in the flour. Overmixing knocks out the air beaten into the eggs and develops gluten, which makes the biscuits dense and tough. Fold gently and stop as soon as the flour disappears.
