Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 300°F (150°C).

  2. Cream the butter and sugar together until light.

  3. Beat in the orange juice and lemon juice and rind.

  4. Add the beaten egg yolks and mix well.

Bake and top

  1. Fill two pastry shells with the mixture and bake.

  2. Beat the egg whites until stiff, then gradually add the powdered sugar.

  3. Spread the meringue over the baked pies and return to the oven for 2-3 minutes.

What each ingredient does

Eggs
Yolks thicken the filling and whites whip into the meringue topping.
Butter
Adds richness and fat that makes the filling smooth and tender.
White sugar
Sweetens the filling and helps the butter cream to a light texture.
Orange juice
Provides the main citrus flavour and acidity in the filling.
Powdered sugar
Dissolves easily into the whipped egg whites to make a stable, sweet meringue.

The step that matters

Beating the egg whites until stiff. Whites must be whipped to stiff peaks before the sugar is added gradually. Under-beaten whites will weep or collapse, and the meringue will not hold its shape in the oven.
