Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Whipped by air incorporation to form the light, foamy structure of the dish.
Powdered sugar
Adds sweetness and dissolves into the cream, lightly stabilising the whipped texture.

The step that matters

Removing the froth from the liquid. Whipped cream is a foam of air bubbles in fat. If over-whipped, the fat clumps and separates from the liquid, so stopping at frothy and draining off the watery liquid keeps the texture smooth.

Swap the orange

How well each one fits the dish's main ingredients (cream, sugar, lemon):

  1. Vanillafits about as well
  2. Orangethe original
  3. Raspberryfits about as well
  4. Limefits less well

Fit is the average pairing score against cream, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
