Why it works: Haddock and sauce match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 200 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ingredients

Directions

The book says “a good oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the fish

  1. Remove skin and bones from the haddock and cut it into neat pieces.

  2. Place the fish in a pudding dish.

  3. Sprinkle with pepper, salt, and lemon juice.

  4. Pour the thick white sauce over the fish.

Top and bake

  1. Mix the mashed potatoes with milk and butter.

  2. Spread them neatly over the fish, then smooth the potatoes.

  3. Mark with a fork.

  4. Add bits of butter on top.

  5. Bake in a 400°F (200°C) oven for about 40 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Haddock
Forms the main body of the pie and cooks through in the oven.
Mashed potatoes
Form a soft topping that bakes into a golden, sturdy crust over the fish.
Thick white sauce
Adds moisture and richness so the fish stays tender while baking.
Butter
Adds fat that helps the potato topping brown and gives a richer flavour.

The step that matters

Spreading and smoothing the potato topping. The potato layer must cover the fish fully and be smoothed evenly so the fish stays moist and the topping browns evenly rather than in patches.
