Puff Pastry

Ingredients

Directions

Make the dough

  1. Sift the flour onto a clean surface.

  2. In a bowl, mix the egg yolk, lemon juice, and cold water.

  3. Combine this mixture with the flour to form a dough similar in consistency to the butter.

Laminate the butter

  1. Roll the dough out to about 1 foot in length.

  2. Place the butter in the center of the dough and fold the ends over it.

  3. Turn the pastry and roll it out thinly.

  4. Fold the pastry into thirds and refrigerate for at least 10 minutes.

  5. Repeat the rolling process twice, refrigerating in between each rolling.

  6. Roll a total of seven times after adding the butter, refrigerating between each two rollings.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Forms the gluten network that gives the dough its structure and holds the layers.
Unsalted butter
Forms separate solid layers that release steam in the oven, creating flakiness.
Egg yolk
Adds fat and richness and helps bind the dough together.

The step that matters

Keeping the butter cold between rolls. If the butter softens and smears into the dough, the layers merge instead of staying separate. Chilling between each roll keeps the butter firm so steam can lift distinct layers during baking.

Swap the lemon

How well each one fits the dish's main ingredients (flour, butter, egg):

  1. Raisinfits better
  2. Vanillafits better
  3. Lemonthe original
  4. Coconutfits about as well

Fit is the average pairing score against flour, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
