Ingredients

Directions

The book says “a good oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the lemon filling

  1. Grate the yellow rind from the lemon.

  2. Combine the grated rind with the juice, sugar, and butter in a saucepan.

  3. Beat the egg.

  4. Add the beaten egg to the mixture.

  5. Stir over low heat until the sugar dissolves and the mixture thickens.

  6. Remove the mixture from heat.

  7. Stir occasionally until it cools.

Fill and bake

  1. Line patty pans with pastry.

  2. Fill each pan with a teaspoon of the lemon mixture.

  3. Bake for about 15 minutes in a 350°F (175°C) oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg
Thickens the lemon filling as it cooks and gives it a set, custard-like body.
Butter
Adds richness and a smooth texture to the filling.
White sugar
Sweetens the filling and helps balance the sharpness of the lemon.
Lemon
Provides the acidic, aromatic flavour from its juice and rind.

The step that matters

Stir over low heat until the mixture thickens. Egg proteins set at gentle temperatures, so heating too fast can scramble the egg and leave lumps. Low heat with constant stirring lets the filling thicken smoothly.

Swap the lemon
