What each ingredient does

Gelatine
Sets the strained liquid into a firm, sliceable jelly as it cools.
Lump sugar
Sweetens the fruit liquid and adds body to the finished jelly.
Apples
Provide pectin and fruit flavour that contribute to the jelly's body.
White rum
Adds aroma and a warm, spirited flavour to the jelly.

The step that matters

Straining the boiled mixture. Gelatine sets clear only in a liquid free of solids, so straining out the pulp and seeds thoroughly prevents a cloudy, grainy jelly.
