Why it works: Potato and pepper are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 8,305 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the base

  1. Pass the baked potatoes through a sieve.

  2. Add the butter, pepper, salt, and egg yolks to the potatoes and mix well.

Fold and bake

  1. Whip the egg whites to stiff peaks and gently fold them into the potato mixture.

  2. Pour the mixture into a buttered soufflé dish.

  3. Bake in a preheated oven at 350°F (175°C) for 30 minutes.

Serve

  1. Serve as a vegetable or second course dish with sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiff peaks, they trap air that lifts the soufflé as it bakes.
Egg yolks
Enrich the potato base and add richness and structure as it sets.
Baked potatoes
Form the light, starchy body of the soufflé.
Butter
Adds fat for richness and smooth texture in the potato base.

The step that matters

Folding in the egg whites. Folding gently keeps the air bubbles in the whipped whites intact. Overmixing deflates them, so the soufflé rises less and bakes up denser.

Swap the potato

How well each one fits the dish's main ingredients (egg, butter, pepper):

  1. Capsicumfits better
  2. Asparagusfits about as well
  3. Chivefits about as well
  4. Potatothe original

Fit is the average pairing score against egg, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
