Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornstarch
Thickens the filling into a smooth, sliceable custard when heated with the liquid.
Egg
Adds richness and helps set the filling as it cooks.
Sugar
Sweetens the filling and balances the sharpness of the lemon.
Lemon
Provides acidity and aroma from the juice and rind.
Butter
Adds fat for a richer, smoother texture.

The step that matters

Stirring cornstarch into boiling water. Cornstarch must be fully wetted first and added to boiling liquid so the starch granules swell and thicken evenly; lumps form if it is dumped in dry or unstirred.
